French Lace Cookies

I’m going to say straight away that this cookie is very high in sugar; in fact it’s practically all sugar, so please be aware of the status of your health before consuming these.
There are a lot of variations of this ‘cookie’. I used almond meal instead of having almond chunks in my cookie, so the pattern that came out on my cookie was very fine and pretty :) That being said the cookies you see here are no where near thin enough; for these the thinner the better because these are extremely sweet. For those that are more daring, just when these babies have come out of the oven for about a minute or two, try wrapping them around a wooden spoon to make something fancy :) But be warned! They will still be very hot!
French Lace Cookies
Ingredients:
-2 tablespoons unsalted butter
-1/4 granulated sugar *
-1/4 cup light brown sugar *
-1/4 light corn syrup *(alternatively you can use golden maple syrup etc)
-pinch of salt
-1/4 cup all purpose flour
-1/2 almond meal
-2 tablespoons heavy cream (optional)
Method:
- Preheat oven to 190C/375F
- Place butter, salt, all sugars and syrup into a medium sized saucepan. On simmer, heat and stir until butter has melted and mixture is smooth.
- Remove from heat and add in cream (if using), flour and almond meal. The dough should be sticky!
- On your silpat or a baking tray lined with paper, drop (you might need to assist the dough getting off the spoon, otherwise you’ll be waiting forever) teaspoons worth of dough on, giving each scoop at least a healthy 3-5 centimeters distance apart.
- WATCH YOUR COOKIES LIKE A HAWK AS YOU BAKE THE FIRST BATCH! So then you know how long it takes for the cookies to cook- each oven is different, but give the cookies at least 5 minutes or until the cookies begin to brown at the edges and centre.
- You can either wait for these cookies to cool completely or wait 1-2 minutes after they come out before turning these very maleable cookies into something pretty.
* I reduced the amount of sugar I used, and most likely it affected the way my cookies came out. But I’m okay with that because I’m watchful of the amount of sugar my family and I are taking in. Would I make these again? Probably not, just because I thought the amount of sugars I used was overwhelmingly too much, even when I reduced it from the batch I made. That being said, just as long as this cookie is a very ‘sometimes only’ food and you are also eating a good balanced diet, it’s a nice cookie to have for dessert.
